Daphne’s Snowy Cheddar cheese is an American Original influenced by a “Kiwi” cheddar recipe. It is made with pasteurized cow’s and goat’s milk combined with proprietary cultures and aging in plastic helps create an unusually moist, lemony flavor profile. Along with the unique “cheddaring” process, the minimum 2 months of aging gives the cheese its fluffy, crumbly consistency.
As a replacement for the commonly used cow milk cheddar, the Snowy Cheddar gives a greater balance of flavor to a cheeseburger. This cheddar melts beautifully and is ready to make cheddar great again.

Daphne’s Brie is a soft-ripened triple crème gem made with a new and improved recipe. Previously a double cream brie. “Soft-ripened”, meaning bloomy on the outside from being inoculated with mold which helps break down the fat and proteins to give it its unique flavor and texture. The “triple crème” means extra cream has been added to give it extra richness. This brie is at its prime when it gives a little to the touch when pinched along its sides. One’s patience and taste buds are rewarded when Daphne’s Brie is allowed to come to room temperature; the mushroomy nutty flavors and the creamy texture are at their best. Be transported to a French café when you enjoy this brie with a fresh baguette and a glass of rosè. Fresh fruit, toasted nuts and cured meats are also delicious accompaniments.

“Smooth” is in the name for a reason. With extra cream added to the recipe it makes this blue smooth, creamy, and divine. The milk hails from cows that have been grazing in the rolling green pastures of Wisconsin neighboring the production facility. The clean pasteurized milk is transformed by the hands and expertise of Master Cheesemakers into a cheese that is aged for a minimum of 4 months. The results are a pleasingly pungent blue cheese that has a silky but crumbly texture. It takes center stage on a cheese board paired with toasted nuts and honey. It blends well in a sauce for a tenderloin or a dressing for a salad. Paired with a Tawny Port or a late harvest dessert wine makes for a standing ovation to any meal.

Daphne’s Creamery Fresh Mozzarella balls are created using a nearly century’s old Italian family recipe. The most important first step of the process is sourcing the local hormone- free Jersey whole milk. Then the curd is stretched to order and packaged every day for freshness. The rind-less porcelain white rounds are milky, moist, and soft with a delicate elasticity.

Daphne’s Mozzarella takes center stage in a traditional caprese salad alongside tomatoes and basil. It melts beautifully on a pizza or in a pasta dish, and makes for a delightful creamy surprise in an aranchini ball.
